Select editable text
Choose the Text Tool, tap the page and type. Select an existing text box to work with its object controls. The official Text Tool guide describes font, size and other formatting icons where supported.
A picture of handwriting or a pen stroke is not automatically an editable typed text box.
Set a style for new boxes
The documented workflow offers Save as Default in the selected text object’s More menu. The Text Tool’s active menu can also set the style for new boxes.
Saving a default is different from reformatting every existing object. Compare a newly created box with an old one so you understand the scope.
Handle platform differences
Goodnotes’ platform FAQ currently says different fonts for the Text Tool are not available on Android, Windows and Web. If the expected font picker is absent there, follow the current platform documentation rather than assuming an iOS-style menu must exist.

Keep text inside the page
The Text Tool guide notes that large text can be hidden beyond page boundaries. Resize or reposition the object and use smaller chunks where needed.
